How times flies… the 18th consecutive year of Tastes of the World Chef Culinary Conference, will once again take place on the beautiful campus of the University of Massachusetts, Amherst, on June 10-15, 2012. The number 18 is especially auspicious for many Asian cultures; for us, we anticipate the best year yet!
We will celebrate our 17th year, by inviting many top-notch presenters and welcoming back some of the best past speakers. Our theme this year: Simple Food, Healthy Eating, will focus on many simple (less processed, uncomplicated to prepare) healthier dishes with a plenty of flavor and a reverence for incorporating locally produced, seasonal foods.
It is hard to beat mom’s cooking; this much we know is true. How many famed chefs or great cooks got their start by learning from parents, grandparents or other family members? Home cooking is often simple to prepare, with the use of authentic, natural and local ingredients – just the thing that our customers are looking for.Read More
The journey of exploring a variety of street foods has just begun and with newly acquired recipes in hand, many of the attendees will try to replicate some authentic street food at their respective campuses and will do so with a desire to create exciting food for their students.
With the theme Small Plate, Big Flavor, we will be focusing on how we can offer smaller portions and bolder flavors to our customers. With the three hot-button topics of campus dining: Flavor, Wellness and Sustainability continuing to draw major attention, we will continue to explore how we as culinarians/operators can deliver delicious but smaller portions by leveraging the world of healthy flavors in the most sustainable manner.

The University of Massachusetts Amherst will continue its emphasis on promoting healthy food options by hosting this year”s 12th annual “Tastes of the World” Chef Culinary Conference on healthy food and flavor. The international gathering of campus food professionals will be held June 5-9 in the Campus Center and Hampshire Dining Commons, and includes a presentation by renowned chef Jacques Pepin.
